Artichokes with walnut: The best combination to eat for the spring season

Khushdeep Kaur • Staff Reporter Apr 20, 2023

Everyone makes artichokes differently and may use different dips to enjoy the rich flavor that effortlessly completes the snack.

My grandmother loved to eat artichokes all the time. Every spring season she enjoyed steaming fresh artichokes and serving them with walnut dip.

Italy, France, and Spain are the largest producers of artichokes and artichokes are native to the mediterranean.

However, in the United States, the state of California is one of the states that produces the largest amount of artichokes compared to the entire country.

The months of March through May are when artichokes are at their peak. This is also the perfect time to steam and eat some fresh artichokes.

Artichokes require minimal amounts of prep work in terms of recipe preparation. Here is one way to enjoy steamed artichokes with creamy walnut dip as well:

The ingredients for this are:

1 tablespoon sherry vinegar

1 teaspoon Dijon mustard

1 clove garlic

1 lemon, juiced

4 large artichokes

1 cup toasted walnuts

2 tablespoons chopped fresh chives

The very first thing to prepare for this is filling a large bowl with lemon juice and water and then you may continue to stir all the ingredients together.

Next, cut the stems from the artichokes using a paring knife, and then peel off the stems. Put these artichokes and stems into the bowl where you previously stirred lemon and water.

Then, you may start working with one artichoke. Using a serrated knife you may cut off the top by a third.

After that, use scissors to remove the sharp leaves and again transfer these into the lemon water bowl.

Boil the water in a container and arrange the trimmed artichokes in it.

Cook these for 20 to 40 minutes until it is visibly tendered. The time will vary depending on the size of the artichokes.

Drain these well and transfer to another bowl or container.

And within the time you wait for the artichokes to cook, put walnuts, vinegar, garlic, and mustard in a blender with just a little bit of water so that they can get a smooth texture.

Then put this into a bowl and stir in with the chives.

There you have it, you may serve these artichokes and stems with a side of walnut dip.
