Highline students have more food choices on campus starting this week.

A series of food trucks will visit campus daily, Monday through Thursday, from 11 a.m. to 2 p.m. on the west side of the Student Union, Building 8.
“We are having food trucks on campus to provide additional food options to our students, faculty and staff besides what the Bistro offers,” said Rachel Collins, Highline’s director of Conference Services, who also manages the Bistro.
Yummy Box was the first food truck to visit campus on Monday, featuring a variety of Southeast Asian and Japanese food.
“The name Yummy Box is bento boxes,” said owner Jack Hsue.
Some of the food items they offered included orange chicken, ahi tuna poke, Japanese chicken katsu curry, and pot stickers.
Hsue said that they are originally from Edmonds and that it was their first time in South King County.

“I opened the Yummy Box food truck about five years ago to have the freedom to bring food to people outside of the restaurant,” Hsue said.
Yumbit will be coming on Thursday from 11 a.m. to 2 p.m. Yummy Box will be coming in on Mondays.
Highline didn’t pick specific food trucks to come on campus, said Conference Services Director Rachel Collins.
Instead, they reached out to the Washington State Food Truck Association.
“They made the request to their members to sign up for who was available and interested in coming to our campus,” she said.
Collins said whether and which trucks come to campus will depend on how much business they manage to generate.
